  1. To make ginger garlic paste, combine all the ingredients in the mixer and blend till smooth using ½ tbsp of water.

  1. If you want to store the ginger garlic paste for longer period, store it in the deep freezer, upto two months.
  2. You can add 1 tsp of oil if you wish to, however it is optional.

Method for ginger garlic paste

 

    1. In a mixer, put 1 cup peeled garlic (lehsun). You can buy readymade garlic or peel it at home. To peel it easily, place the garlic pods in the microwave, and heat on HIGH for 20 seconds (might take more or less depending on the wattage of your microwave). When you remove it, be careful as it might be a little hot, but you will be surprised to see that the garlic pods will just slip out of their skin!
    2. Add 1/2 cup peeled and roughly chopped ginger .
    3. Add 1 teaspoon oil (optional). If you wish you can increase the quantoty of oil to get extra smooth homemade ginger garlic paste.
    4. Add 1/2 tablespoon water. This helps in grinding the paste.
    5. Add 1 tsp salt. Salt is a must as it preserves the colour of the paste and acts as a good preservative. Hence we recommend that you use the measured quantity of salt. If the salt is less, then the paste changes the colour to light green.
    6. Pulse for 10 to 20 seconds. 
    7. Mix the partially blended paste with a spoon.
    8. Blend again. We can see that a bit more blending is required.
    9. Blend till you get a smooth ginger garlic paste. Ensure that no piece of ginger or garlic is left behind.
    10. To store ginger garlic paste, transfrer it in a glass container and keep it in the fridge. It stays fresh for upto a week. If you wish you can store in any air-tight container (except glass) in the deep-freezer for upto 2 months. Remember to remove it from the freezer at least half an hour before use. 
tips for ginger garlic paste

 

    1. To peel garlic easily, place the garlic pods in the microwave, and heat on HIGH for 20 seconds (might take more or less depending on the wattage of your microwave). When you remove it, be careful as it might be a little hot, but you will be surprised to see that the garlic pods will just slip out of their skin!
    2. Though oil is optional, we recommend adding it to get a smooth finished paste and also increase its shelf life.
    3. Salt is needed to preserve the colour of the paste. If the salt is less, then the paste changes the colour to light green. Hence we recommend that you use the measured quantity of salt.

Hi, Oil is added to avoid discoloration of the paste..add a small quantity, or else make small quantity and use it within a weeks time..

Thanks for sharing this recipe. Friend, I would like to know if I can use water instead of oil. Could I make the paste using only garlic and salt? How much time is conserved in the refrigerator? Thanks a lot!

Hi Marceline, If you add water, the shelf life will be less. Yes you can make the garlic and salt paste and can store it in the fridge for 1 week and freezer for 2 weeks.
